Ceviche Shitake

Ceviche is a classic Peruvian dish made with fish. Here I recreate this dish with shitake mushrooms. You can use other kind of mushrooms if you don’t have Shitakes on hand.

It serves 2-4 people, depending on what you serve as a side dish

YOU WILL NEED: 

– 300g Shitakes or classic white mushroons, cut in 4

– 1 small onion, cut i stripes

– 70g edamame beans

– 50 g avocado(1/2 of one medium), cut in small cubes

– 1 medium tomato

– Nori flakes

– 1 tablespoon sesame oil

– salt and pepper

– juice from 4 limes

HOW TO: 

Just mix everything in a bowl with the lime juice and let it sit in the fridge for 1-2h or overnight. It tends to get better from one day to another but you can eat immediately If you prefer

It is also delicious when served with rice crackers, cooked rice, baked sweet potato potato or plain like that.

I served mine with baked sweet potato slices and pan fried plantains.
