Coxinhas

WHAT YOU WILL NEED:
 for 3-4 people

Coxinhas

  • 200g cooked white beans
  • 200g cooked sweet potato(I used white sweet potato but orange also works)
  • 1 onion, chopped
  • 2 garlic cloves, mashed
  • 70g to 100g rice flour
  • ½ tsp salt
  • 1-2 tbsp olive oil
  • Optional: crashed unsweetened corn flakes

Filling:

  • 300g green jackfruit, shredded (you can also use mushrooms)
  • 1-2 tbsp olive oil
  • 1 onion, sliced
  • 2-3 garlic cloves, mashed
  • 100ml white wine(optional)
  • ¼ cup canned tomatoes
  • 1 handful chopped parsley
  • 1 tsp cumin powder
  • 1 tsp sweet paprika
  • ¼ tsp smoked paprika
  • 1 tsp worseschester sauce

HOW TO:

  1. Coxinhas: Blend the cooked white beans until smooth;
  2. Mash the sweet potatoes with a fork and mix with the beans in a bowl;
  3. Fry the onion and garlic in a drizzle of olive oil with a pinch of salt until juicy and soft;
  4. Mix the fried onions with the mashed beans and sweet potato and add the the flour and salt to the mix. Add flour until it becomes a firm dough, if the sweet potato had too much water you might need more flour and that’s ok;
  5. Filling: Heat a frying pan and fry the onion and garlic until juicy and soft;
  6. Add the dry spices and let it fry for about 1 minute;
  7. Add the jackfruit, tomatoes and wine and let it cook for about 10 minutes;
  8. Adjust salt and pepper to taste and set aside to cool down;
  9. Finishing: Make small balls of dough and flat each ball to add one tbsp of filling inside. Close the balls forming the tips or if it’s easear for you just form balls;
  • Roll the small coxinhas in the corn flakes and bake it for about 20 minutes at 180°C
