Grilled Cantaloup Salad & Pistachio Vinaigrette

This one has the best flavors of summer. Simple food is just perfect for sunny days!

Grilled Cantaloup Salad & Pistachio Vinnaigrete

WHAT YOU WILL NEED:
Serves 2-3 portions

  • ½ cantaloupe melon, sliced
  • 1 medium zucchini, sliced
  • 2-3 handfuls rucola
  • 1 hanful fresh parsley and mint
  • 2 tbsp toasted pistachios
  • Optional: vegan feta, crumbled

Pistachio Vinaigrette:

  • 2-3 tbsp olive oil
  • 1 tsp mustard
  • ¼ tsp salt
  • •1 tbsp pistachio butter(or just use crushed pistachios)
  • ¼ cup water
  • 1 shallot, chopped

HOW TO:

  1. Heat a frying pan or grill and grill both sides of the cantaloupe slices. Set aside;
  2. Repeat the grilling with the zucchini slices and set aside;
  3. Mix the chopped herbs with the rucola, zucchini and cantaloupe slices;
  4. Top everything with the toated pistachios, optional feta and vinaigrette;
  5. Vinaigrette: Just mix everything in a small jar until smooth use it to top your salad;
