Celeriac Sauerkraut Fritters with ginger miso dip

You probably already noticed that I love small savory bites! I think they are such a good easy way to snack before dinner and also easy to impress guest with this first flavorful bite.

If you are receiving guests or even for yourself, try this small celeriac fritters and enjoy the punchy flavors. In case you are not the small bites big fan, it’s also possible to make pancake or burger size and enjoy in a different way, you just have try it out!

WHAT YOU WILL NEED:
for 3-4 people

Fritters:

  • ½ celeriac, grated
  • 50g sauerkraut
  • ¼ cup chickpea flour
  • ¼ cup water
  • 1-2 tbsp olive oil
  • ½ tsp salt
  • Cummin seeds(optional)
  • Pinch of black salt

Ginger Miso Dip:

  • 2 tbsp almond butter
  • 2 tbsp applesauce
  • 1-2 tbsp white miso
  • 2 tbsp almond or olive oil
  • 1 tsp freshly grated ginger

HOW TO:

  1. Fritters: cook the grated celeriac until soft, about 5-7 minutes. Let it cool down for about 10 minutes;
  2. Mix all the ingredients together until it forms a thick, sticky batter;
  3. Heat a frying pan with a drizzle of olive oil and fry the fritters, using a spoon;
  4. Dip: Mix all the ingredients together and set aside;
  5. Serve the small fritters with some dip on top or on the side and sprinkle with extra fresh herbs for freshness.
