Chocolate Pear Cake


for 3-4 portions

  • 260g buckwheat flour
  • 25g corn starch
  • 60g cocoa powder
  • 260g muscovado sugar
  • 1/4 tsp baking soda
  • 2 tsp baking powder
  • ½ tsp salt
  • 240ml plant milk + 2  tbsp lemon juice or apple cider vinegar
  • 1 tbsp natural vanilla extract
  • 120ml olive oil
  • 10 tbsp pear puree(or apple sauce)
  • 4 pears, cut in half or quarters


  1. Mix the plant milk and lemon juice in a jar and let it set for 20-15 minutes;
  2. With a fouet or in a mixer, mix all the ingredients together at low speed;
  3. Slowly add the Plantmilk until the batter looks smooth and creamy;
  4. Transfer the batter to a cake pan and bake it for about 30-40 minutes at 180°C
