Black Rice Spiced Warm Salad

 

We just finished our second live cooking, it was so much fun! Thanks to everyone that joined!! Here you have the full recipe so you can make yourself this delicious Black Rice Salad!

WHAT YOU WILL NEED:
for 3-4 people

  • 1 cup cooked black rice(brown rice or barley are also great options)
  • 300g pumpkin, in cubes
  • 1-2 tbsp Grated ginger
  • 2 big handfulsCavolo Nero, chopped (Kale, rucola or spinach also work)
  • Juice from 1 orange
  • Olive oil
  • Salt to taste

Dukkah:

  • 50g hazelnuts
  • 30g almonds
  • 1 tsp ground coriander
  • ½ tsp fennel seeds
  • 1 ½ tsp ground cummin
  • ½ tspblack pepper
  • ½ tsp cummin powder
  • ¼ tsp salt
  • 2 tsp sesame seeds

Pickled onion:

  • 1 red onion, sliced
  • ½ cup vinegar
  • ½ water
  • 1/2 tsp salt
  • 1 tbsp sugar or mapple syrup
  • 1 bay leaf
  • ½ tsp fennel seeds

HOW TO:

  1. Heat a frying pan with a drizzle of olive oil and grill the cubed pumpkinwith the grated ginger and a pinch of salt for about 5-10 minutes;
  2. CHopp the cavolo Nero and place it in a bowl with a pinch of salt, orange juice and olive oil. Massage the leaves and set aside;

  4. Chopp the nuts with a knife and mix with the spices in a small container. Set aside;
  5. Pickled Onions: Mix all the ingredients together, bring it to a boil and let it simmer for about 2 minutes;
  6. Finishing: Heat a frying pan with a drizzle of olive oil and add the black rice to the pan, let it fry for about 1 minutes, add the pumpkin back and fry for one more minute with a pinch of salt;
  7. Transfer the rice mix to the kale bowl and mix really well together.
  8. Top everything with a generous amount of dukkah and some pickled onions on top.
