Black Bean Brownie and Ice Cream

We just finished a special live where I cooked while Marina Lai made me lots of questions. 

Talking and Cooking….Could it get any better? Yes!

WHAT YOU WILL NEED:
for 6 people 

  • 1 cup cooked black beans 
  • 110g brown sugar or coconut sugar
  • 60g oat flour
  • Pinch of salt
  • 2 cocoa powder 
  • 50g coconut oil
  • ½ tbsp applecider vinegar
  • 1 tsp baking soda
  • ½ cup crushed pecan or chocolate chips 

HOW TO:

  1. Pre-heat the oven at 180°C; 
  2. In a small food processor, blend the beans with the coconut oil until it becomes a thick, smooth paste; 
  3. Transfer the mixture to a bowl and mix all the ingredients together with a spatula; 
  4. Transfer the brownie batter to a baking tray and bake it for about 20 minutes; 
  5. Serve warm with a good scoop of ice cream and some chocolate sauce.

Pear and Walnut Ice Cream

WHAT YOU WILL NEED:
Serves 4-6 people

SORBET: 

  • 500g pear, cut in cubes
  • 100g cashews, soaked overnight
  • 2 tbsp mapple syrup or honey 
  • 80g walnuts

HOW TO:

  1. Rinse the cashew and blend it with the frozen pear and mapple syrup for about 3 minutes until creamy and smooth; 
  2. Once the ice cream is ready, you can add the walnuts with a spatula and store it in the freezer or enjoy it immediately with some black bean brownie!
