Italian Lemony Soup

 

Back to Luxembourg and I already miss so much my Brazilian summer days  but so happy to have my kitchen back!!

Nothing better today then this delicious hearty lemony soup. It’s full of hearty, warming and fresh flavours.

It’s so easy to make you have no excuse not to try this recipe!!

WHAT YOU WILL NEED:
 for 4-5 people

Filling:

  • 1-2 tbsp olive oil
  • 1 onion, chopped
  • 2-3 garlic cloves mashed
  • 3-4 medium potatoes
  • 3 cups cooked white beans
  • 2 celery stalks, chopped
  • 2 cups chopped kale or cavolo nero
  • 2 cups plant milk
  • 1L water or veggie stock
  • Zest and juice from 1 lemon
  • 1 tsp salt
  • Thyme

Finishing: optional garlic olive oil toast

HOW TO:

  1. Heat a large pan with a drizzle of olive oil and fry the onion and garlic with a pinch of salt until juicy and soft;
  2. Add the chopped celery and thyme to the pan and let ir fry for 2 minutes;
  3. Add the potatoes and cover with water or veggie stock and let it cook for about 20-30 minutes;
  4. Add the cooked beans, plant milk, lemon zests and adjust salt;
  5. Bring it to a boil and let it simmer for about 5 minutes;
  6. Adjust salt and add the lemon juice.
  7. Serve warm with optional garlic olive oil toast
