Artichoke White beans Burger

Do you know someone that doesn’t like a good veggie Burger? I think even meat eaters will admit that from time to time a veggie Burger is just the perfect thing to enjoy!

In this one I use white beans and artichokes, but you are free to be creative and use any kind of beans you wish or veggy. Kidney beans goes well with paprika and coriander, Black Beans, shitakes and lot’s of garlic or the classic lentil mushroom combo is also perfect. 

Remember this recipe when you make your next Barbecue and I promise you this is much better then any market ready veggie patty. 

WHAT YOU WILL NEED:
Serves 2-3 people

  • 300g cooked white beans
  • 2-3(180g) medium artichoke, chopped
  • 1/2 onion, chopped
  • 45g oats
  • 30g rice flour
  • 1 tbsp psyllium husk(optional)
  • 1/2 tsp salt
  • Handful chopped parsley
  • 1 extra artichoke for finishing, cut in 4 (optional)
  • Tomato, sliced(optional)
  • 2 Burger Buns, toasted

Creamed Spinach sauce:

  • 25g sunflower seed, toasted
  • 100g tofu 
  • 1-2 tbsp olive oil
  • ¼ cup water
  • ½ tsp salt
  • 1 tsp mustard
  • 1 garlic clove, mashed
  • 3-4 handfuls fresh spinach

HOW TO:

  1. Heat a frying pan with a drizzle of olive oil and fry the onions with the chopped artichokes for 2-3 minutes; 
  2. Transfer the mix to a food processor with the beans and salt. Blend for about 1 minute; 
  3. Add in the rice flour, oats, chopped parsley and chopped psyllium. Mix everything with a spatula and set aside for 15-20 minutes; 
  4. Meanwhile blend the tofu, mustard, olive oil, salt and water for 1-2 minutes until creamy and smooth;
  5. Mix in the toasted sunflower seeds and set aside; 
  6. In a heated frying pan, drizzle some olive oil and fry the garlic with the spinach for about 3 minutes; 
  7. Add the tofu cream to the pan and bring it to a boil. Set aside
  8. Mold the burgers with the hands in the desired size(according to the bread); 
  9. Grill the burger both sides with a drizzle of olive oil until it becomes crisp golden on the outside; 
  10. Transfer the grilled Burgers to a Baking tray and bake it for about 10 minutes at 190°C;
  11. Serve the Patties topped with the creamed spinach and some artichoke quarter on top. Close the Burger and enjoy the taste of this summery Veggie Burger!
